2012 01 01: Roasted Chickpeas

It was a rough week chez RebKnitz when it comes to being, well, responsible, so despite the spaghetti squash and zucchini in the fridge, most of my vegetable came in the form of coleslaw or stir-fried cabbage. I needed to try a new recipe, though, and I wanted some snack food.

Lucky for me, I had just seen this recipe, and had all the ingredients on hand.

Very quick prep. Quite delicious. My only recommendation is that you pay attention to the times in the recipe, and when the timer goes off, don’t sit at your computer playing solitaire. Get up and deal with the chickpeas. Mine are a little overcooked. But still good. Definitely a keeper.
