2011 12 18: Oven-fried zucchini

Here’s the recipe.

All I have to say is WOW. I’ve never liked zucchini, but this has changed my mind. I did have a lot of the breading left over after only two zucchini, so used it on tilapia…also yum…and will be buying more zucchini.

(These are better hot, when they are crispy, but still good at room temperature, and even the next day when they’ve gotten cold and soggy in the refrigerator. But I recommend sharing them so you don’t have leftovers.)
