For the second week of PROJECT VEGETABLE!! I asked my friends on Facebook to “pick a vegetable, any vegetable.” Foolishly, the only vegetable I asked to be excluded was parsnips.
First vegetable chosen? Carrots.
I have a bit of a “thing” against orange vegetables.
But I had told myself that I would use whatever vegetable was recommended first, so carrots it was. I took out my never-used vegetable cookbook and decided that all of the carrot recipes looked bad. Or rather, too similar to all of the carrot dishes I’ve ever eaten and hated.
Pinterest, here I come!
I found a recipe for carrot chips. And you know what? They were good! They are going on my list of approved vegetables.
