2011 11 27: Spaghetti squash kugel

Week one of PROJECT VEGETABLE. Spaghetti squash.

Everyone says that spaghetti squash is a reasonable substitute for spaghetti. Well, I don’t like squash. This might be because most squash is orange and I have a thing against orange vegetables.

But I put on my big-girl pants and put a spaghetti squash in my cart at the supermarket. (Note: if the big sticker on the squash hadn’t had cooking directions on it, I wouldn’t have bought it.)

The first night, eating it as a substitute for spaghetti, was fine.

But OHHHHH the leftovers.

Improvised recipe:

  • cooked spaghetti squash
  • egg
  • sour cream
  • salt and pepper

Mix it all together, put it in a baking dish, and bake until done.

YUM YUM YUMMEROO.

THIS will be making an appearance at my Shabbat table.
